I am not convinced that the problems with modern chronic diseases are due to wheat. It is more likely that people's bodies are too fat from eating saturated fats, trans fats and cholesterol and their fat cells and muscles cells and organs are over-stuffed with fat. Wheat is junk when it is refined and the fiber is taken out of it or pulverized. Leave the wheatberry intact and boil it and for most people it is fine and research studies show it is heart protective. I think some people are having problems with wheat just as some people have problems with other foods like peanut butter. To say carbs are bad is to say the least stressful fuel for the human body is bad. That is just crazy pants!
